If you're like me and love spicy food, maybe you add hot sauce to every thing you eat, then you will love celebrating International Hot and Spicy Food Day January 16th. And also if you're like me, the problem arises that not everyone in your family can handle hot and spicy food. For instance my 3 year old doesn't handle it well, nor do my parents. This means I have to get my spicy food some other way. That's where chili garlic oil comes into play. It's the perfect condiment. You can make a bland meal spicy while allowing others to eat their food unadulterated with heat. Chili garlic oilUsed across many cuisines in South-East Asia and Europe, chili garlic oil is the perfect condiment if you love spice. I love using it to top soups, and pasta, but it makes a great dip for dumplings too. I can also recommend it as a salad dressing situation and a great way to finish up your pizza. It's also easy to make, and will keep in your fridge for a couple weeks to months if you'd like to make a large batch of it all at once. Another thing I love about chili garlic oil is that it's customizable. I've used this recipe with fresh jalapeños, serrano chilis, left out the garlic, added other spices, and every time it has always been delicious. With the year coming to its end, I'm in a contemplative mood reflecting on the happenings of the past year. I feel like it's a perfect time to journal. I've been journalling my whole life (since 2nd grade). I don't do any of the cool bullet journalling, though I love to admire it. No, I'm more of a spill my guts on the page type of girl. But sometimes it can be hard for me to think of what to write. In fact, when I was 21, I had a goal to write in my journal everyday, which I accomplished but some of my entries literally said "I'm tired. Today was boring" and that's it! So I accomplished my goal but maybe without the best results. Recently, with quarantining and staying home it's seemed like days blend together and I'm not sure what I could write about each day that would be different. For this reason my journaling has, sadly, fallen behind. 24 Journal PromptsTo take my journalling to the next level I decided to create prompts that I can use over and over again but what I'm writing won't be the same every day. I took 4 different types of days we all have; great, bad, boring, and days when you're feeling nostalgic and I wrote 6 different prompts for each day. I put them on little cards I can keep in my journal and use as a jumping off point to help me get my writing started and have it be a bit more thoughtful and interesting. As I wrote the prompts I wanted to make sure they were geared to positivity but realistic in expectations of what could be written. For example, on the bad day prompts I have "Vent about your day" but I also ask "Who put a smile on your face today?" I am a big believer in looking for the good and for those who help us out. I also have prompts that may seem like they're only good for one use like "Describe the best meal you've ever had," but that could become "Describe the best dessert you've ever had," "Describe the best day you've ever had," etc. Make the prompts work best for you! I also love that I can go back and read about my own life and it's easier for me to remember lessons I've learned. Sometimes reading what I wrote when I was younger makes me cringe, but it's all part of growing up and it's what has made me who I am today! A journal is most effective when you try to be as honest as possible. That's what I've tried to steer towards with these journal prompts and what makes me excited to use them. I like to think of my journal as a friend who only listens without judgement. This way I can gain more insight into my own life. Another thing that makes journaling effective is having journaling supplies you love. I found these vegan leather journals on Etsy that are amazing. I personally like using fine liner pens to write in my journal. But find the supplies that you like best. Garlic Sesame Grissini in fact. Actually Maddy made them for me because my original plan didn't work out. Sometimes recipe testing is just like that, nothing turns out the way you want, but it helps to have a great team around you who can help you out and come up with something even better in the end. Well I'm so glad she took over because her breadsticks came out much more beautiful and tasty than mine. And we're sharing the recipe with you now! Garlic Sesame GrissiniGrissini is a long, crunchy breadstick that originated in Italy. They're great for appetizers, snacks, or eating with soups. They're also beautiful and would be a great addition to a charcuterie board or a table spread. Because Maddy made these that means they're actually vegan friendly (just substitute agave for the honey), which means all your friends and family can happily munch away on these tasty treats. Make sure to make extra because these are sure to go fast! You want to get these nice and long (at least 16 inches) so having even portions of dough is helpful. I love to use my bench scraper to help me cut and shape dough easily. Plus it has a little ruler on it which is helpful for measuring out portions of dough! And when it comes time to clean up, the scraper easily scrapes up any dough stuck to my counter (just be careful not to scratch your countertop if you don't have stone countertops). On the ninth day of Christmas my true love gave to me nine ladies dancing...so I used the lady fingers to make tiramisu! This is a recipe I originally posted as part of my international recipes series. I thought it would be perfect to repost for our 9th day of Christmas because it's my favorite recipe that uses lady fingers.
This would be a lovely dessert to share on Christmas. And it freezes beautifully! I have a sister-in-law who is part Italian, her mother is from Italy (born and raised). They kindly shared their recipe for Tiramisu with us. It is also a coffee-free version "for those Mormons." It uses hot chocolate and it's very delicious. They made a lot of individual servings for my brother and sister-in-law's wedding, it was so good! My husband told me he loves tiramisu, but he likes the kind made with the fake coffee. So this led me on a hunt for a recipe that would work for his desires (since he wanted it for his birthday and Father's Day). Well all the recipes I found used coffee and liquor. In the end I adapted both recipes I had to create this tiramisu that still has the coffee bite without the coffee. The drink I used is called Pero and is actually barley based. It comes in other brands as well such as Postum, Inka, Cafix, and others. It has a very strong flavor but is caffeine free. It's a very popular drink in other countries. My husband said he had it in Chile often when he lived there.
If Mascarpone Cheese is too out of your price range (I was blessed to find it on sale), cream cheese can be substituted.
