Back in the mid-70s, Jello put out a dessert kit that my dad just loved. It was called Spoon Candy. It was pudding treat in candy flavors, like peanut butter cup, that had a chocolate topping that hardened like the outer chocolate of a candy bar. Unfortunately, after about 3 years this delectable dessert was taken off the market for some unknown reason. I guess not everyone liked it as much as my dad did. (Well, the rest of our family liked it, too.)
Fast forward to this decade and an ice cream topping called Magic Shell is sold in grocery stores. It has the magical ability to pour as a liquid out of the bottle and then harden quickly when it gets cold. There are versions of this product put out by Smucker's and by Hershey. As soon as I became acquainted with this stuff I flashed back to Spoon Candy. I thought to myself, "Surely I can remake that magical, retro dessert."
I found the recipe for peanut butter pudding on tasteofhome.com. Then, I wanted to make a vegan version, so I substituted coconut milk and coconut cream for the milk and cream in the recipe. Maddy loved it! It did have a little hint of coconut flavor mixed with the peanut butter flavor, which was not a bad thing at all. When the pudding is slightly cooled and setting, pour Magic Shell on the top and cool the rest of the way. Hershey even has a Reese's Peanut Butter flavor shell which made this dessert even better!
After the peanut butter experiment was a success, it started to be fun to come up with more flavors and add ins that would give the delicious Spoon Candy experience. I thought, this would be a fun family activity! Have some flavors of pudding available and various add ins and see who can come up with the most creative combinations. I prefer cooked puddings. But, if you use instant, like we did for some flavors, don't use soy or almond milk in instant pudding or it won't set. Coconut milk works great!
I must confess that this version is not exactly the way I remember Spoon Candy to be, but it is pretty good. Besides, that was 40 years ago, so my memory is probably fading! This is still a great way to have some fun and deliciousness on a weekend! Happy Fun Friday!

Well, I've been having so much fun on this Fun Friday that the blog is going up a little late, but hey, you can still have fun all weekend long!
Yesterday I posted about the fresh pesto that I made without pine nuts out of the basil in my garden and I promised you a recipe to use it in. So, today I am showing you a variety of recipes that you can make for a family pizza night, one of which is a Pesto-Goat Cheese Chicken Pizza! That is the great thing about DIY pizza, you can put whatever toppings on them that you want and personalize them to fit your taste. We like to use our favorite pizza dough recipe that I shared on this post long ago. Or, if you are worried about gluten or anything like that, you can make or purchase a cauliflower crust. Lindsey shared a recipe on this post.

I know that some people just hate the idea of pineapple on pizza, but I love a good Canadian Bacon pizza with pineapple on it. Here are some other topping ideas, apart from the normal pepperoni and cheese!
First, I prepared my dough and let it rest and rise while I cooked the chicken and prepared my toppings.
I used my grill pan to prepare the chicken. I used olive oil, salt, pepper, dried oregano, dried basil and garlic to season it. I used chicken tenders that cooked quickly. When they were all cooked, I chopped the chicken into bite-sized pieces.
As toppings, I prepared cheese, shredded carrots, broccoli, chopped tomatoes...You get the idea, you can use as many toppings as you would like. For the Chicken-Pesto-Goat Cheese PIzza, I did the following:

If you want to use a traditional red tomato pizza sauce, you can use themarinara recipe I posted here. You can use an immersion blender to make it smooth if you like.
Cooking is more fun for me when I am making things that I grew or created myself. We made the dough from scratch, I made the pesto, I grew the basil and the tomatoes! It all tastes so good! Salmon is probably my very favorite food and when it is prepared with this recipe, I could eat the entire fish. I know that you may hear from famous TV chefs that you should never mix fish with cheese. But, I am here to tell you that salmon with Parmesan is delicious. My son had friends that would ask if I was making salmon for dinner to see if they could come over and have some. That is how good this fish is. I am fairly surprised that I haven't shared this with you before because I prepare it and eat it as often as I can and never tire of this salmon.
I am not giving you a recipe to print out because it doesn't have exact measurements. I will just tell you what I do. It is super easy, quick and I never like any preparation of salmon better that this one.

The verdict is in! This year, in order to accommodate everyone's schedules, we are doing Easter Brunch at our house! I am actually pretty excited about it! All of the kids who live in town, and those "adopted" into our family kids and various other friends and family are going to attend church with us at 8:30 AM. My husband and I will be singing in the choir. I am going to love looking down from the choir loft and seeing so many loved ones there with us listening to the Easter message. We get done with our Sunday meetings at 10:30. Since we live across the street from our chapel, it will be easy to come home and pull out all of the food that I will have prepared the day before and enjoy a lovely brunch together!
And what will the menu be, you ask? Well, that is still in the planning stages. But one of our favorite dessert/brunchy foods is a nice cake roll! We usually make and give away pumpkin rolls at Christmas time. (I can't believe we haven't shared our recipe for those yet)! For Easter, I thought a nice Carrot Cake Roll sounded like just the thing for Spring! I've made one to try it out! It is definitely going on my Easter Brunch menu!
As I began to create this recipe, I started thinking about other cake roll recipes I've made or eaten. The nice things about cake rolls is that you get a lot of bang for your buck! They are pretty simple to make, they don't have to bake very long and they look beautiful when they are all finished and decorated and sliced! Best of all, they taste deliciously decadent! All of these thoughts helped me to decide that cake rolls would be the Friday Faves subject for this week! Not only that, I came up with a nice little surprise for our subscribers! This cake roll has the traditional carrot cake flavors of cinnamon and carrot with some sweetness of pineapple. The filling is a cream cheese filling with pineapple added as well. You don't have to add the pineapple, you can make it a plain cream cheese filling. But, my husband loved the pineapple in the filling. The frosting is our regular popular recipe. Those carrots aren't fondant, I just piped them on with the frosting. I am so excited to serve this at our Easter Brunch! And you can make it and serve it as well!
