Guys, I am having so many technical difficulties with this post it is driving me nuts! I want to talk to you about Butter Chicken! I want to talk to you about Crock Pots! I want to tell you that my husband should become a chef! I want to tell you that my husband should become a chef and make this Butter Chicken in the Crock Pot for me for forever! He made Butter Chicken in the Crock Pot the other night and it was amazing! I don't know why it is called Butter Chicken, but that is really neither here nor there. The only struggle with a Crock Pot is you have to have the patience to let it cook. PH and I almost didn't have that patience with this Butter Chicken recipe but I am glad we did! It made me very very happy. I want to say so many other things but the technical difficulties are prohibiting me from sharing with you more Butter Chicken love! So, I am going to keep this brief and just tell you to pull out your Crock Pot (or whatever slow cooker brand you own) and make yourself this Butter Chicken and be happy. PH found the original Butter Chicken in the Crock Pot recipe here. He tweaked it by omitting the coriander pods and including a teaspoon of chili powder. Do these things, and be happy!

I went back to work a few months ago, and it has truly been the worst thing ever. I don't get to see my baby all day, then when I do see her I am exhausted. Well, wonder of wonders, miracle of miracles, as I was grocery shopping last week I found bags of pre-spiralized veggie s in the frozen foods section! I bought spiralized zucchini, carrots, beets, sweet potatoes, and I think a few others. Pre-spiralized veggie saves me so much time! On days where I don't have to work I don't mind using my spiralizer to create my own veggie pasta, but when I get home dead tired after work and just want to spend time with my baby, these pre-made zoodle (and other veggie noodle) bags are a life saver! Now you may also remember this post from awhile back where my mom shared with you how to make this chicken cacciatore in the crock pot, with a little help from Panna! Well, with my powers combined, I took the pre-made zoodles, and made the Crock Pot Chicken Cacciatore. When I put them together, I had a culinary masterpiece!! This is such a great dinner options for when you're on the go. You don't need chicken nuggets from McDonalds, or anywhere else! Just pull a bag of pre-spiralized zoodles, or any other time of veggie noodle from your freezer, and follow the directions. In less than ten minutes your zoodles are ready! Before I had my little chicken nugget I had never heard of it. I always planned on starting her on pureed foods just like I had started, and basically everyone I have ever known who has ever had a baby has done. Well, then at her four month appointment her doctor told me I could start her on solids and I bought some veggies and pureed them and we got started and... well... it was just a lot of work. Until very recently she was really only into eating one meal a day and I didn't have the energy to keep pureeing different things. I have purchased baby food from time to time, but it can be, and IS, so expensive! So, I started researching Baby Led Weaning (BLW) and now that my little miss is six months old we are implementing it and I have to say, it is SO much messier than purees, but so much easier to feed her! Enter these muffins. ABC Baby Led Weaning Muffins I call them. the ABC in these muffins stands for Apple Banana Carrot. Those are the main ingredients in these BLW muffins. They make them light and sweet. The texture is perfect for a little one just learning to eat, who may not have teeth yet! We have FINALLY been getting rain here, which is wonderful! The only drawback is that the storms keep happening right during this little lady's swimming lessons. I got her all dressed to go when her swim instructor (who happens to be someone I had previously baby sat when he was in diapers) called to say that lessons were once again cancelled because of the rain. I have done it everyone. I have done it, for you! As you may recall, breastfeeding has not been a walk in the park for me. It has been a battle, and I am now a warrior. Of all my research on what to do to increase breast milk production I have come across and great number of lactation cookie recipes. Lactation cookies are great, who doesn't want a good excuse to eat a cookie every day? I wanted to change it up a little bit, and I had some overripe bananas. Thus it was that my idea for lactation banana bread was born.
I love banana bread. Remember when I shared this gluten free banana bread recipe with you before?I buy bananas because I know I will be bad at eating them and I will end up getting to make banana bread with it! So it was only logical that I would eventually want to make a lactation banana bread recipe full of galactogogues to help milk supply. The way I made this lactation banana bread is even more fun because: 1. They are mini loaves 2. They have chocolate chips in them Let me tell you something. When you are breastfeeding your body gets drained of nutrients. You have to work hard to eat healthy and drink lots and lots of water (PH is sometimes shocked at how I can chug water now. I have long been a good water drinker, but I really cannot get enough.) We are working hard to supply our sweet babes with healthy sustenance while they are growing so quickly and are so dependent on us. We get to eat chocolate chips. We get to eat mini loaves of banana bread. So go at it mama. I made this mini lactation banana bread loaves and cut them in half so I could eat one half per day. It is a fun flavor and texture change from cookies. There is also a little less sugar and if you REALLY don't want the chocolate chips it is even less. There is also less butter than any cookie recipe I use calls for. So hey, you are not indulging, but enjoying a lactation banana bread that helps you feed your baby and is still healthier for you, but tastes SO GOOD! I am pleased, and you will be too!
