In the Summer Time, when people around our house are coming and going from work and various activities and the heat is really on, it is great to have a few one pot meals up my sleeve that I can direct people to when they are on their way in or out. Not only that, one pot meals require less clean up and fewer burners turned on to heat up the house. I love this recipe for all of those reasons, besides the fact that it is healthy, full of veggies, colorful and tasty! At this time of year, when people's gardens are producing lots of zucchini, tomatoes and peppers, this recipe uses up a lot of that as well. It is a winner all the way around!
To make it, you start with your vegetables. I like to start by cutting up the zucchini with my wavy slicer. I just like how fancy it makes the slices look. It is particularly nice for slicing veggies for a tray to serve at parties. Mine is from Pampered Chef, here is a similar one at a really good price.
The recipe calls for a couple of cloves of garlic. You can dice them or smash them. I like to put them through my garlic press so that the flavor goes throughout the recipe easier. Mine is also from Pampered Chef, but here is another nice one that costs less.
The vegetables and garlic all get sauteed in olive oil and you add the sausage and seasonings. Tomatoes, both fresh and canned dices go in next. Finally, you throw the rice and water right into the pot and let everything simmer for 20 min.

What do you do when you go on a banana bread frenzy but you just keep ending up with a couple spare bananas? Well eventually you have to go to a different recipe to finish the bananas off.
That is what has been happening to me. When I made that banana bread a few weeks ago for this blog I had a couple bananas left so I went out and bought more. Then I made more banana bread, and then I had a couple of bananas left. This last Saturday morning I was reflecting on what I could do with the rest of those bananas without getting banana bread burnout (this is a real thing.) With the beautiful weather and the busy day PH and I had before us I thought that banana pancakes would be the perfect way to start our day.
It turns out, I thought right. These banana pancakes are so perfect and fluffy and wonderful.
I just want to give you a few pancakes tips. People always wonder, how do you keep your first pancake from going bad? Well, tip #1 is to buy a griddle. It is a seriously great investment and your pancakes will all turn out beautiful every time. Tip #2. Whether you use a griddle or not don't make your pan too hot. Cook your pancakes over medium heat and just be patient before you flip! When the edges of your pancake are dry flip it over. Then they will be a beautiful golden brown.
The pancakes were a hit, they were delicious and tasty and they were the perfect start to our busy Saturday morning. The other great part of this recipe? I whipped all the ingredients up in my Ninja, resulting in very little clean up afterwards. Who could ask for anything more from a Saturday morning breakfast? Enjoy!

Have you ever had something that needed to get cooked, but you were tired of doing the same old thing? You pondered it and pondered it and then, BINGO, it came to you at 5:00 in the morning! Then you laid there, awake, planning out the recipe that you were certain would be the perfect solution. Of course, you had to get out of bed and try it out on your husband! This is what happened to me with this recipe and it explains why by 8:00 in the morning, I was exhausted. Luckily, the results were great, so it is a good reason to be exhausted.
If you remember a few weeks back, I had gotten some Orangetti Squash and I gave you a recipe to use it like spaghetti with chicken.
I did the same process shown above the night before I decided to make my Southwest Style Hash browns. Up until this time, I had only used spaghetti or orangetti squash to make Italian dishes, substituting it for the pasta. This time I substituted it for the potatoes! After shredding the squash, I just stored the shreds in a covered bowl like this. (Similar set here.)
I used my Pampered Chef chopper to finely chop my onion . I wanted the onion to blend in well with the squash. I love using the chopper. No tears! Did you know that you can order Pampered Chef items on Amazon? Here is the chopper I have. I love it. The blade turns on its own to give a really good even chop in just a few strokes. I earned mine by having a party. If it is a little too pricey for you, here is another option that looks good.
I also added diced green chilies, and spices like cumin, cilantro, and a sprinkle of Red Cayenne Pepper. Don't forget the 2-3 cloves of garlic pressed into the mixture. I also have the Pampered Chef Garlic Press which I absolutely love because it is heavy and not flimsy, it is large enough to handle larger cloves of garlic and you don't have to peel the garlic before you press it! I have had both the chopper and the garlic press for a number of years now, and they are still going strong and I use them all of the time.
Once all of your ingredients are will blended, you have two choices for making your hash browns. I used my cast iron skillet for that added health benefit to these already healthy veggies. Click on the pictures for descriptions.

It's been the kind of week where things are hard and you are tired and sad and the last thing you want to do is make dinner. Heck, the last thing you have time to do is make dinner. When I have those weeks, they make me sad, because I don't like rough weeks, and I do like to cook. That was this week and I felt at a loss as to what to make you for dinner, you, our loyal readers. Enter, the mango salsa. I was at the grocery store the other night to pick up some items for a brief California trip PH and I took to celebrate his mom's birthday, as well as one nephew's birthday, and one sister's in law birthday. While I was there I saw this mango salsa by Sabra. I love mango salsa. I should force my mom to make me some in her fancy new blender. Well, when I saw the salsa the light bulb over my head turned on and I decided it was a fish tacos kind of night! Fish tacos are really so fast and easy. It doesn't take long to cook the fish, and it tastes so fresh, who need's Rubio's when you can just make it at home? One struggle I always have with PH and I is that it is hard to get ratios right when I am only cooking for two. Buy tilapia that is individually frozen, that makes the fish portions easy. However, it's the cabbage, yogurt, and onion that cause me trouble. Fortunately the grocery store by our house sells half a head of cabbage. It is twenty cents more than a full head, I guess they need to pay the people that went to the trouble to slice it in half for me. It's worth it though because cabbage isn't really something I use a ton, so it all ends up going bad. I also just bought a small single serving of Fage greek yogurt for the white sauce. That way there would only be enough for the two of us. When making fish tacos it really works best to have a husband who will chop up the veggies and make the white sauce for you. However, they will still taste good if you don't have that thing, and you will still be happy to be eating them.
