Our family is going on a week long cabin trip together soon. One of the nights of our reunion we are going to have a chili cook-off! That sounds like a lot of fun, except my husband and I really cannot handle very spicy food. My husband has been especially sensitive to it since he had Covid 19. So, of course, I am joining the cook-off so that I can make sure that at least one of the chilies will be mild enough for our taste!
I decided that the easiest way to make the chili without having to do a long process while on vacation would be to make it at home and can it! So, that is just what I did! I came up with the recipe in my head, made a huge pot of chili for dinner one night and then just canned the rest of it, processing in my pressure canner. Overall, it was even easier than I had imagined. (I had never canned chili before.)

I was out watering my garden and I saw the blossoms of my zucchini coming on the plants and baby yellow squash already growing! It is so exciting! If you are a gardener, you already know that the excitement can quickly change to being overwhelmed with an over abundance of squash!

Zucchini Orange Bundt Cake Zucchini has such a mild flavor that the citrus goes very well with it! This cake is moist and beautiful with the flecks of green from the zucchini and the orange zest. Use a bundt cake pan, like this one.

Shrimp Pesto with Zoodles Anything shrimp is fine by me! Lindsey make this dish as a romantic dinner for two. If you substitute zoodles for noodles, you can use up a lot of zucchini! A nice little spiralizer is all you need!

I decided to make them a little healthier by adding some oats to this recipe, as well as some cinnamon because to me, oatmeal and cinnamon go hand in hand. This is a super easy recipe and I was very happy with the result. Of course, it is a little heavier than a regular pancake, but not too heavy. Because I soaked the oats at the beginning, they blend in very well and these pancakes ended up being a little reminiscent of a muffin flavor. I know if I threw raisins into this recipe, my husband would think he was eating an oatmeal cookie. I hope you enjoy them as much as I did! They really filled my craving! Just the words Molten Lava Cake make me want one, even if I'm not hungry. The idea of that creamy warm chocolate, flowing out of a moist chocolate cake sets my makes my mouth start to water.
