Thank you for your support One family member, my son's mil, Anita, is always so supportive of our blog. She is so talented and always has ideas and inspiration for our blog! This past Christmas, she sent me a yogurt strainer. She showed me her results of making yogurt in her Instant Pot and where she found the recipe. I got so excited thinking about all of the things that I can use this strainer for and for all of the things that I can do with the yogurt. Unfortunately, I discovered that my Instant Pot Lux does not have the yogurt setting. But, I knew that before there were Instant Pots, people still made yogurt. So, my search began for a way that I could make yogurt without an Instant Pot. I found many ways! I used a combination of those ideas and experimented on my own, as is my way. Guess what! My very first experiment was a great success and it was so easy that I can't believe that I haven't been making my own yogurt all along! I made a video of myself making my very first batch of homemade yogurt! Watch it, and then I will list some highlights to help you make your own yogurt without an Instant Pot as well! How is your summer going so far? We have a houseful of people in ours right now because besides my husband, myself and our youngest son living here, Lindsey, her husband and my 3 year old granddaughter are staying with us until their new house closes and they can move into it. Then, to top things off, My husband and I picked up 3 grandsons from Wyoming to come and visit with us for the month of June! We are loving it, chaos and all! One great way to feed a crowd breakfast is with pancakes. Around here we love our pancakes and we have shared a variety of them over the years. From Root Beer Pancakes, to Cinnamon Roll Pancakes to Chunky Apple Pancakes with Red Hot Syrup, we've got quite the variety. Check them all out here. The other morning I asked my grandsons what they wanted for breakfast and in unison they chimed out "Pancakes!" Then one of them added, "Chocolate Pancakes!" So I asked, "How about chocolate chip?" They thought that was acceptable, but, when I reached into my stash of chips, the first ones that I pulled out were Funfetti! We had blueberries in the fridge and I thought to myself, "Funfetti Blueberry Pancakes sound delicious!" I tossed the idea to my grandkids and they were on board, so that morning Funfetti Blueberry Pancakes were born! I am going to give you my old reliable recipe for these pancakes, but you can use any basic pancake recipe and then just add the chips and blueberries. Here are some tips to remember.

It is really fun to watch and when the contestants pull out the weird ingredients that that have to cook with, we like to try to figure out what we would make with them. What have I been doing while staying at home during this Corona Virus disaster? Baking and Cooking! So far I've baked a big batch of Sprouted Wheat Bread, I've made Corned Beef for St. Patrick's Day and an Avocado Key Lime Pie for dessert (twice)! Since we had corned beef left over, and because I was baking bread, my mind started working and I thought about Bier Rocks. If you haven't ever heard of them, they are a free form beef hand pie basically. They usually have beef, cabbage and onions in them. The dough is a bread dough. I got to thinking that a Reuben style Bier Rock would be really good, sans the rye bread, but with sprouted wheat bread instead! So, I tried it and they are delicious! Here is how I did it.
When I made my sprouted wheat bread dough, I saved one loaf's worth of dough and wrapped it in waxed paper and plastic wrap in the fridge until the next day. Then, I gathered my ingredients:

As you can tell, Bier Rocks are very free form. But that is okay. They are easy to hold and eat without a mess, which is one of their beautiful qualities. They transport well and taste delicious.
This recipe is a great way to use up your St. Patrick's Day leftovers!
