Hello friends! It has been awhile since I've posted, and I've missed you! How was your memorial day? Ours was memorable, and sad, as PH's father passed away that weekend due to complications from Alzheimers.
He was a wonderful kind man, and he lived a wonderful, kind life. He is missed here, but we're glad to no longer watch him deteriorate. Alzheimers is one painful disease for everyone involved. Thankfully, we got to be there to say good-bye. Families are a blessing, and eternal families are the greatest blessing! It is what brings us peace and comfort! Since coming home we have been moving forward, as that is what life does. Friday rolled around and Fridays are my day off. I get to spend the day with my daughter, and the two of us got A LOT accomplished this last Friday, including making this tasty Green Chili Burros Salad for dinner!
I don't know why I was suddenly in the mood for green chili burros for dinner on Friday, but I was. Green Chili Burros in and of themselves are an easy dinner option. Growing up my mom would often make them for Sunday dinner. She could throw the meat in the crock pot before church, and when we came home three hours later the house smelled amazing. Maybe I wanted that comforting smell in our home. Maybe I just wanted that delicious food in my belly.
Either way, I decided that was going to be dinner. However, just the night before PH told me that he had made a decision to stop with the sugar and carbs in his life. I want to fully support him in this endeavor, so a knew an actual green chili burro was out of the question. I feel like the great thing about meals like Green Chili Burros is that you can make it a salad so easily! So that is what I did! Now caveat, this isn't exactly my mom's green chili burros recipe. By the time she had responded to me with what she does to make it it was too late, my green chili burro meat was in the crockpot. I have to say though, upon eating my green chili burros salad, I feel like I hit the mark. It was delicious, and a lot healthier without tortillas or sour cream! I told you last week you'd have to come back to get my recipe for Vegan Lasagna, using the Vegan ricotta cheese I made.
Well, here it is! Lasagna is pretty standard when it comes to assembly, but I like to make my own sauce instead of the pre-made kinds which always taste weird to me. If I had more time and energy I would have used tomatoes instead of canned. I did get the unadulterated sauce though, so it still worked out great. I also love doing it this way because, as you can see, I snuck some extra veggies in there, and nobody was the wiser. #Healthyeatingwin I don't give measurements for the seasoning because 1. I have no idea 2. You do you! Nobody is the same. I love garlicky taste, but I feel like you need the oregano to come through clearly as well. Maybe you disagree with me. That is ok. That is the fun of homemade sauce my friends. Now, here is a secret. If you are like me, not vegan, but making vegan things for vegan friends/family members, then follow this tip for regular lasagna. Add Parmesan cheese to your sauce. I could not find a vegan Parmesan, so Maddy had to go without. However, she had two servings of this vegan lasagna, and she took the rest of it (as well as the vegan ricotta cheese) home with her. So, there you go. I'll take two servings as a win and say that this vegan lasagna is delicious.

Happy Monday everyone! It is an especially happy one for me because PH's work schedule changed so now he'll get home earlier in the day. Which means we can start having the regular family dinners I've always dreamed of having!! Hooray!!
​Speaking of family dinner, yesterday was the first Sunday of the month, so we did our family dinner as part of our Come Follow Me monthly family home evenings.
It was our month to host. Yesterday was May 5th, Cinco de Mayo, so we obviously had....
Lasagna! Yes, I kind of dropped the ball on the whole Cinco De Mayo thing, but everyone likes lasagna and it's easy to make, so I went with that! Well as you know, there is our dear Maddy who is vegan. I decided I'd try my hand at making a vegan lasagna that got her approval. Well, first step was to make my own vegan cashew ricotta "cheese" to use in the lasagna. It was so easy to make vegan cashew ricotta cheese you guys! So, this week, I am going to tell you how to make this vegan cashew ricotta cheese which Maddy told me tastes just like the real thing. Then you'll have to come back next week to get my vegan lasagna recipe! In order to make this Vegan Cashew Ricotta Cheese you'll need the following kitchen supplies: Food Processor: I like this one made by Hamilton Beach I also have this fun little immersion blender with a food processor attachment. I love it for onion chopping! It is so fast and easy! That is basically it!

If the cheese is too stiff or crumbly, add more broth, one tablespoon at a time. Mix between each tablespoon until desired consistency is reached.
And that's it guys! this made a lot. Even after I made Maddy her own personal lasagna I sent her home with extra vegan cashew ricotta cheese to use in other recipes this week!

Sorry I didn't post last week! We were in Disneyland!! It was our little one's first time at Disneyland, and I hadn't been in... about 20 years so, it was high time for us to go! Anyway, we are, sadly, back now. BUT! Being back means that I can share this great banana bread recipe with you! I know I have shared a few banana bread recipes with you in the past. Like this great gluten free option here, and this one for lactating mothers. I've also shared with you a pumpkin banana bread recipe, and my mom shared this banana bread in a crock pot! What can I say, banana bread is delicious! I buy a lot of bananas now, but our little one is really the only one who eats them, so I have many opportunities to make banana bread. Well, before we left on our trip I was trying to make sure we didn't have any fruit left to sit around and rot while we were gone for a week. I also did not want to make a huge mess, so I decided to try out banana bread using a cake mix and I have to say, I have no regrets.
We actually took this on our trip and our little one chowed down on it! It was one of the few things she would eat (she is suddenly in that picky stage where she doesn't like to eat any food... yay!) Anyway, I had to share it with you. And, as you can see from my notes, this one can be made gluten free as well! So, now you have so many tasty banana bread options, which one will you pick? |
