UPDATED:
Hey guys, I had to come back and update this post because of a few things that happened recently. 1st, Strawberries are on sale again, so it is obviously time to start eating strawberry shortcake! Which made me think about this recipe and you! 2nd, since last year, we have become a gluten free house. PH noticed (after I pointed it out to him) that gluten gives him trouble. So he's decided to cut out the gluten in his life. 3rd, a few weeks ago we had a family dinner at my parent's house. My mom tried to find a recipe for a gluten free (for PH) and vegan (for Maddy) strawberry shortcake. The results were... well. One time Maddy bought a vegan pizza and Alicia said it tasted like despair. It can really be so hard to find a good gluten free recipe. Well, this past weekend was General Conference weekend for our Church (The Church of Jesus Christ of Latter Day Saints) and we invited the missionaries in our ward (congregation) to come watch a session and have dinner with us. I had a fridge full of strawberries. So I decided to test out this recipe with some changes to make it gluten free. (It just so happens they're vegan too!) The Results? My husband said, "these do not taste like despair!" Interpretation: success! See my notes below for how to make this recipe vegan and gluten free. The weather is warming up (it is here at least) and warm weather means it is strawberry season! I love strawberries and every time they're on sale I have to buy them! Well, as you may recall, the last time strawberries were on sale I stocked up and my mom and I showed youhow to can your own strawberry jam. Well, this time around I was in the mood for a sweet treat, so I made strawberry shortcake! Strawberry shortcake has got to be one of the easiest, lightest, and freshest desserts out there! The great thing about this recipe is that if you take the first four ingredients I list for the cake you can make your own homemade Bisquick mix and make a huge batch! Then you can make strawberry shortcake all the time. If you use a batch of the mix, use two cups to make this strawberry shortcake. Since it is a Bisquick type mix, the shortcake itself is more of a sweet biscuit. It's light and sweet, and lets you focus on the flavor of the sweet strawberries and cream! This is a quick and easy strawberry shortcake recipe, and its the perfect ending to any summer meal! To make this recipe gluten free just swap out the flour for Bob's Red Mill All purpose Gluten free flour. the Xanthan gum is included, and it is a 1:1 ratio switch. I made these gluten free for a friend once, and they turned out a little drier than normal, like most gluten free things do. She told me that she has since started swapping out butter in her recipes for applesauce and it takes care of that problem. Well, I tried it, and it worked! Swap out the 3 TBSP melted butter for 3 TBSP applesauce. This helps the biscuit stay moist! Finally, for a Vegan option, after you swap the butter, just use almond milk instead of regular milk. I do this all the time in recipes and you can't tell the difference! Just as a quick and final side note, as you may recall, we have partnered with Uber! You can click on our links to start the process of becoming a driver partner with Uber. It's a great way to make some extra cash on the side. Well, as a woman, you may have some apprehensions about driving with Uber but a girl's gotta hustle too! Uber's safety features are designed to help you feel more secure in your decision to drive. Here are a few highlights that should help give you added peace of mind while you're doing that weekend hustling. Share Your Trip In case you're ever feeling unsafe or if you just want to let your friends know where you are, you can activate the "Share My Trip" feature within the Uber Driver-Partner app. Just go to your settings and with a tap of a button, invite people from your contacts list to see where you are on the road. They won't see any details about the rider on your trip but they can keep an eye on where you are. Turn this on when you're about to finish your last trip of the day and head over to a girls' date! This is a doubly good feature since your gals will know you're on your way and can confirm when you get there. Riders Must Share Details Before a user starts taking rides with Uber, they must create an account using their phone number, name and electronic payment. Riders are not anonymous and Uber keeps records in the case you need to report anything related to the rider. Obviously these details are not shared between riders and you but there's an added layer of protection if you do need to get in touch with a rider. Also, Uber anonymizes phone numbers so that riders won't have your personal number and vice versa. Round the Clock Support Uber has response teams on call 24/7 for any incidents that need support. Whether a rider forgot their wallet in the back of your car or left a bit of a mess, you can contact Uber support for help with next steps to get it resolved. Good morning dear readers! How was your weekend? Mine was really good! Which was nice because last week was a rough week for me. Maybe I'll tell you about it another time.
After a rough week, it's good to have a good weekend. We went hiking together as a family on Saturday and it was gorgeous and a lot of fun, and good to get out and get those muscles working! Sunday after church we decided it was high time we go meet our neighbors who moved in across the street about five months ago. I know I know. We're slow. They were friendly and invited us in for a visit which was really nice except my daughter fell and bit her lip and started bleeding. The hazards of toddlerhood. That was the only rough park of the weekend, my poor baby boo getting injured because she tried to stand on a ball. After we got her home and cleaned up, cheered up, and asleep, I got started on dinner. This tasty dinner, which was actually pretty quick to make. I am a fan of Thai food, and chicken is pretty much my staple meat. I am always trying to find recipes that'll force my husband to eat more vegetables. So this Thai Chicken peanut sauce and veggies was the perfect solution. The veggies are all in with the meat and the sauce, there is no escaping them! This was a pretty healthy, yet still filling meal. You could make it a little lighter by using lite coconut milk if you want. I won't stop you. I didn't do it, and PH said the peanut sauce was pretty thick, but it was flavorful! So, go ahead and enjoy this Thai Chicken Peanut Sauce and Veggies. Your mouth will thank you, and if you had a rough week, this will probably make the new one start off better. Okay guys, lets talk Alfredo. Lets talk Chicken Alfredo. Let's talk Chicken Alfredo Parmesan.
This is a rich dish that I don't usually make because I feel immense guilt eating my entire daily allotment of calories in one meal, no matter how tasty it is. Like, alfredo sauce is so creamy and decadent isn't it? Well, I can't tell you that this sauce doesn't include butter and cream cheese and half and half, because it does. But, if I can make you feel better at all, I swapped out the pasta for spaghetti squash. And it is the little things guys. Those little hidden veggies that your kid will eat because they're coated in alfredo saucy goodness. It's feeling like you've made one step towards healthier by including a veggie instead of a carb. Those things give us a win. That is why this tasty, creamy, decadent Chicken Alfredo Parmesan Spaghetti Squash is a win. Not only does it taste deliciously wonderful, and a little sinful. It has a veggie. Instead of a pasta. Now you can go win a little bit more in another area of life. Because we are all winners here. This Chicken Alfredo Parmesan Spaghetti Squash is a true winner.

I am back with another Air Fryer recipe and renewed zeal! Maybe it's the purchase of our air fryer, but I have a goal to plan out our home meals two weeks at a time, preparing our shopping list accordingly, and go forth and cook!
This is great news for you dear reader, because I will have so many new recipes to share! Like this delicious Air Fryer Chicken Chimichanga recipe! Raise your hand if you have an air fryer and love it! Raise your hand if you love chicken chimichangas!
Raise your hand if you think the combination of air fryers and chicken chimichangas into one great Air Fryer Chicken Chimichanga sounds amazing!
(Psst. Your hand should be up!) I made these Air Fryer Chicken Chimichangas for dinner on Saturday and they were a hit! The air frying part goes so fast! I'll admit, I cooked the first two for about 8 minutes and they were pretty dark. They still tasted delicious though, I just prefer a little lighter. If you like dark tortilla crispiness on your air fryer chicken chimichangas, go right ahead and leave them in a couple minutes longer! The chicken was so moist and delicious. Salt your chicken before cooking!!! And save some of the chicken broth because you'll need it for the filling! I served these with a side of my vegan refried black beans. It was a great meal. Our baby girl chowed down on them! And she only has five teeth! So, pull out your air fryer and get to making these Air Fryer Chicken Chimichangas because they are just what this Monday needs!
