Okay guys, I have a story to tell you.
A few weeks ago my mom invited us over for Sunday dinner. Some old family friends were in town and she had invited them over and was planning on making her famous tacos. She initially asked me to bring lettuce. Well, the day before the dinner I asked if we could bring something else because we did not have lettuce and I didn't want to have to go buy any. She asked if we had any refried beans and I said yes, and we could bring those. Well, Sunday morning I looked and what I thought was a giant can of refried beans turned out to be enchilada sauce. Oops... As you may or may not know, we do not shop on Sunday. It is one of several ways that we try to keep the Sabbath day holy, by refraining from making purchases and running similar types of errands that could be done on any of the other six days of the week. Well, we did have several cans of beans, just not refried and I thought, "I bet I could make refriend beans because... the internet." So I snooped around and learned a few things and made these fast, simple, tasty, and VEGAN homemade refried black beans! That's right, these homemade refried black beans are vegan! You don't use lard to make these refried black beans, and with no animal fat, it meant Madalynn could have some too. Hooray! These homemade refried black beans are so tasty and versatile, You can use them as a base for a bean dip, put them in some burritos, or serve as a side like we did with my mom's tasty tacos. So, if you're looking to really impress your friends at your next potluck, whip up these tasty, vegan, homemade refried black beans and you will be everyone's hero!

Guys, ever since my husband admitted he had a problem, we have been living the gluten free life. I have ventured into gluten free land before, but now it is a whole new world. Everything I bake must be gluten free or he can't eat it. Generally he says I just shouldn't bake things because he doesn't need to be eating it anyway. Sometimes though, you just need a treat. I cannot eat all the cookies all by myself!
Okay... I totally could actually... but why should he miss out?? Well, I was on a quest to make a pumpkin chocolate chip cookie that wasn't quite so cakey, but more like a regular chocolate chip cookie. Now, it ALSO had to be gluten free! I am here to tell you guys... I did it! I found the best gluten free pumpkin chocolate chip cookies! These gluten free pumpkin chocolate chip cookies are soo good! Don't judge that it is almost March. Pumpkin can, and should, be consumed year round. Friendly reminder, pumpkin is good for you. So anyway, my favorite gluten free flour mix definitely came in handy this time around. Bob's Red Mill makes great gluten free flour blends! This one comes with the xanthan gum already mixed in. It is a 1 to 1 ratio. I like that a lot. It takes very little effort to switch out basic cookie recipes for this great gluten free substitute. Here is another great thing about this recipe: it is egg free! You are just a short step away from making it vegan. So... if you want to, go ahead and do it! You could switch out the butter for your favorite vegan butter, and use these vegan chocolate chips instead. I'm lookin' out for you my vegan and gluten free friends! So, go make these gluten free pumpkin chocolate chip cookies and try not to eat all of them at once! (Although, you totally could. I would not judge you.)

I know, I know. You read the title of today's post and said, "uh... it's February. Also, polar vortex." Hear me out!
I know that winter is not the time we generally want to drink a nice cool smoothie, but this one has pumpkin in it, which makes it velvety and delicious. It is also healthy! I had some banana I needed to get rid of, and really, your winter options are bread, or cake, or cookies. Do you know what is faster than all of those and requires way less clean up? A pumpkin banana smoothie, that's what! You just throw all the ingredients into your blender (or your Ninja like I used) and whip it up. My daughter ate half of mine. She wanted it all to herself really. Which is why she climbed on my lap and stared at me, mouth open like a little bird, waiting for me to give her another bite. Honestly, she is the cutest. Honestly, this smoothie is delicious. It'll keep you healthy and full, and remind you of warmer days, which are really just around the corner! So, make this smoothie. Drink it, and imagine yourself sitting pool side. You look good in your swimsuit because you didn't eat so much cake this winter, but opted for a delicious and healthy smoothie instead!

Hello readers! Do any of you have an Air Fryer? My mother in law gave us one for Christmas, and we have been Air Frying everything ever since!
PH and I love our cooking appliances. We are a gadety kitchen. This is a GREAT gadget and let me tell you why. 1. It cooks everything really fast. 2. It doesn't heat up your kitchen during those hot summer months. 3. The meat always turns out moist and juicy. No regrets you guys. If you get an Air Fryer, your life will change!
Last night we had family over for dinner for our monthly Family Home evening. We were hosting. I made my mom's amazing gluten free brownies for dessert since PH is a Valentine's baby and he loves brownies. And we made these delicious pork chops using the air fryer!
Now I will give the caveat that we had particularly thick cuts of meat so we had to cook our chops for a bit longer than the recipe calls for. If you have really thick chops like we did, add an extra five minutes to the cooking time to ensure they cook all the way through. Seriously guys. These air fryer pork chops are so good! Try them for dinner tonight, and enjoy! |
